Celebrating my first year of veganism! One of the best decisions I have ever made.
I am not big into New Year’s resolutions, but this year I want keep my focus on healthy living. To celebrate and stay motivated, I bought a food processor (to make so many more yummy recipes), a yoga mat to start my routine, and started reading The China Study - an absolute wealth of knowledge on nutrition and its effect on cancer, heart disease and diabetes among other things. I will try to get as many people to read it as possible, especially my loved ones. The research is staggering.
Veggie Pizza - super easy.  Bought whole wheat Naan, spread some vegan pesto on it, added some onions, olives, broccoli, zucchini, and spinach, and popped it in the oven. Ten minutes at 400 degrees (put it directly on the oven rack so the bottom gets a little crispy).  Yummy meal in 15 minutes.
